Puffy Pancakes

        
            Tired of the same old breakfast cereal during the week?  Wouldn't you just love to have the time to go to IHOP and have some great pancakes?  Yeah well it is not always the easiest either to go out with a toddler that doesn't always want to sit.  Sometimes it's just easier to eat at home.  Why not make an extra large amount of pancakes on the weekend, then freeze for easy reheating during the week.  Here is a great recipe that freezes well.  I got it off food.com.  The only difference I made was adding vanilla to the ingredients.
        
          Ingredients:
  1. 1 and 1/2 cups of flour
  2. 3 and 1/2 tsp of baking powder
  3. 1 tsp of salt
  4. 1 Tbl of sugar
  5. 1 and 1/4 cup of milk
  6. 1 egg
  7. 3 Tbl of melted butter
  8. 1 Tbl of vanilla
Mix all of your dry ingredients in one bowl.
Then whisk your egg, milk, and vanilla in another.
 Combine the dry and wet ingredients together.  After they are combined add the melted butter.
 Let the batter sit for about 10 minutes before you start cooking up the pancakes. They will be more puffy this way.
Now just pour the maple syrup and enjoy!  Don't forget to freeze the leftovers for a really easy during the week re-heat.
