My 9 year old reminded me today that I had yet kept my promise to make ice cream sandwiches like the kind the local ice cream shop makes. There's are supersized Oreo Cookies with ice cream in the middle.
Guilt set in so after school was done today I set out to complete my promise. I just made some adjustments to the Oreo Cookie recipe I had posted back in August. I think I like the way these "Oreo's" came out better actually then my original post's recipe.
Ingredients for ice cream
- 4 Cups heavy cream
- 2 Cups whole milk
- 2 Tbl vanilla
- 1 pinch of salt
- 1 1/2 Cups sugar
Ingredients for the cookies
1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa. I used Hershey's.
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 Cup sugar
9 tablespoons room-temperature, unsalted butter
1 large egg
1 Cup melted semi- sweet chocolate chips
Melt the chocolate chips and let them cool a bit. I melted them in my microwave for 60 seconds, stopping every 20 seconds to stir. After 60 seconds it should all be melted with a stirring.
Beat the butter and the sugar together. Then add the egg and beat to incorporate.
In another bowl combine the flour, cocoa, baking soda, baking powder, and salt. Add the dry ingredients in increments to the butter and chocolate mixture. (You don't want flour flying everywhere).
You may need to use a rubber spatula to scrape the sides of the mixing bowl.
On a cookie sheet prepared with parchment paper, take tablespoon fulls of cookie dough and place them on the parchment. Then roll them into a ball and then flatten them out to form large circles. These do spread when cooking so space them 2 inches apart.
Then place them in the refrigerator for 10 minutes. You can preheat your oven to 375F.
After 10 minutes place the cookies in the oven for 8 minutes. When you remove them from the oven, let them sit on the cookie sheet for about a minute before placing them on a cooling rack.
Once they are cooled, place them in a container in the freezer for at least 30 minutes.
Place a large scoop of ice cream on one cookie and top it with another and press gently. Smooth out the ice cream with a wet finger.
I got 28 cookies out of the recipe. I made a very deprived little boy very happy today.
Oh, your Oreo chocolate ice cream sandwiches look fantastic!... they look better than the store-bought version. So glad your son enjoyed them:).
