Roasted Broccoli


                     Here is a yummy way to eat broccoli and get some great health benefits as well.  You can read this article to learn some of the benefits of broccoli.

                     Roasting broccoli brings out a nuttiness in it.  It also retains a great dark green color that can get lost when boiled or steamed.  Roasting it for a proper length of time will prevent it from becoming mushy and help keep its health benefits.  Like cauliflower and cabbage, it also has anti carcinogenic properties.  So let's eat our veggies!



Ingredients
  1. Broccoli spears from 1 to 2 heads of broccoli.  Slice them in manageable pieces.
  2. 3 Tbl olive oil
  3. 1/2 tsp salt
  4. 1 tsp lemon juice
  5. 2 cloves of garlic (sliced)
In a baking dish add the broccoli and garlic.  Then drizzle the olive oil and lemon juice over them.  Sprinkle the salt.  Toss all to combine.  Then place in a preheated 400F oven.  Cook for 15 minutes.

Serve as is.  It is simple and delicious.  It barely made it to the dinner table.  This is our new favorite way to eat broccoli.
