Chicken Salad with Mango Sesame Salad Dressing

I love salads in the summer.  You can combine so many flavors, and of course the summer makes you want to work with tropical flavors.  This salad does just that.  I added chicken to it, but you can always make this a meatless dish.  The dressing is oh, so good.



Ingredients
  1. 4 oz. of diced mango (about 1/2 Cup)
  2. 1/4 Cup chopped onion
  3. 1/4 Cup pear juice (you can substitute pineapple)
  4. 2 Tbl brown sugar
  5. 2 cloves of garlic
  6. 1/4 tsp dry ginger
  7. 1 tsp dijon mustard
  8. 1 Tbl sesame oil
  9. 1/4 Cup apple cider vinegar
  10. 3/4 Cup of canola oil
  11. 1 Tbl soy sauce
  12. 1/8 tsp. cayenne pepper
Mix all the ingredients in a blender and blend until everything is combined well.
To use with the chicken, place some of the dressing in a zip top bag and add the chicken to it.  Let it marinade for at least an hour.

Place on a grill and baste it with more dressing.

Chop up the chicken and add it to your salad.  Top with some more dressing.
Yummy, and refreshing.
