Ingredients
- 4 oz. of diced mango (about 1/2 Cup)
- 1/4 Cup chopped onion
- 1/4 Cup pear juice (you can substitute pineapple)
- 2 Tbl brown sugar
- 2 cloves of garlic
- 1/4 tsp dry ginger
- 1 tsp dijon mustard
- 1 Tbl sesame oil
- 1/4 Cup apple cider vinegar
- 3/4 Cup of canola oil
- 1 Tbl soy sauce
- 1/8 tsp. cayenne pepper
To use with the chicken, place some of the dressing in a zip top bag and add the chicken to it. Let it marinade for at least an hour.
Place on a grill and baste it with more dressing.
Chop up the chicken and add it to your salad. Top with some more dressing.
Yummy, and refreshing.
