Cauliflower Salad


                     I wanted to post another salad made with cauliflower.  This can be made with cooked or raw cauliflower.  I personally prefer it cooked, but my husband liked it raw.  Whether cooked or raw, it is another great way to serve cauliflower.  I always find it fun to serve up what seems like a boring vegetable, and present it in a different way.  It's also quick and easy and can be prepared a day ahead of time.



Ingredients
  1. 16 oz. chopped cauliflower florets ( raw or cooked)
  2. 2 stalks diced celery hearts
  3. 1/3 Cup reduced fat mayonnaise
  4. 2 Tbl sugar
  5. 2 tsp dijon
  6. 2 Tbl red wine vinegar
  7. 1/8 tsp paprika
  8. 1/4 tsp celery salt
  9. pepper to taste
Make the dressing by combining ingredients 3 to 9.   Then add the cauliflower and celery.  Mix together and then allow to sit for a couple of hours to let the flavors meld.
