With every January comes the old resolution of losing weight and getting more fit. I don't know one person that has never made that resolution. A good way to lose weight is to lower your carbohydrate intake. A good article to read on why carbohydrates help you gain weight can be found here.
The next few posts will be low carb salads, so if any of you are looking to lose weight, maybe these will be inspiring for you to make.
Ingredients
- 14 oz. chopped cauliflower florets. This was from a head of a huge cauliflower of which I made two recipes. (you want bite sized pieces)
- 2.75 oz. diced celery hearts ( I used 3 celery hearts)
- 1 Tbl white vinegar
- 1 tsp fresh lemon juice
- 1 tsp dijon mustard
- 2 Tbl mayonaisse
- 1/3 Cup reduced fat sour cream
- 2 Tbl dill pickle relish
- 1/2 tsp salt
- 1 Tbl fresh chopped dill
You can add chopped onion if you like. A Granny Smith apple would probably work well in this too.
It is best to let the salad sit overnight for the best flavor.
Steam the cauliflower for a few minutes to cook. You don't want the cauliflower to be mushy, but cooked enough so a fork can go through it. Don't overcook it. Drain and then rinse with cold water.
In another bowl whisk all of the other ingredients (#3-#10) together. Then add the celery and cauliflower.
Cover and let sit overnight.
