Peppermint Ice Cream


                 Close to the coming of the holiday season, a certain ice cream company comes out with their Peppermint Ice Cream.  My husband's one request of me during a shopping trip would be to buy a gallon of it.  I decided this year, that since I am trying to cook most of my family's food so I know what is in it, that I would try and make it.

                  I found peppermint extract at Target in the summer, and I knew exactly what I would do with it when the time came, which was today.

                  This is so easy and quick to make that it is worth taking the ice cream maker out for.  I can't complain though, mine weighs just a couple of pounds once the freezer container is in it.



Ingredients
  1. 1 Pint of heavy whipping cream
  2. 1 Cup of whole milk
  3. 1/2 Cup of sugar
  4. 1 tsp of peppermint extract
  5. a pinch of salt
  6. 7 drops of red food coloring
  7. 2 Tbl of candy cane powder (explained below)
Take 3 candy canes and pulverize them in a food processor.  I used my mini processor.  Save any candy cane powder that goes unused another recipe.

Mix the heavy cream, milk, sugar, peppermint extract, salt, and food coloring in a mixing bowl until the sugar dissolves.  You want to use it right away.  If you will not be using it right away, cover and refrigerate it.



Pour the mixture in an ice cream maker.  When the ice cream looks like it is coming together(past the liquid stage and becoming more solidified), add the candy cane powder.  Let the ice cream maker continue churning until the ice cream is well formed.

 Scoop out the ice cream and place in a container that will go into the freezer to continue freezing up.

Simple, right?

  1. Oh, Siggy the peppermint ice cream looks sooo pretty...
    The only peppermint ice cream I made was this past year(or maybe a couple of summers ago) when I had an overabundance of peppermint growing in my garden. Used the fresh leaves to extract the peppermint flavor. It tasted delicious , but was in no way as pretty as yours:)...
