Cauliflower Quiche with Mashed Potato Crust

         
            I  wanted to make something different today for dinner, as well as rather quick.  I wanted to use simple ingredients I had on hand in the house because it was a school day as well as an after school activity day, which at this point is 4 days a week, whew!  It was also vegetarian night, so it was going to be a veggie dish.  I had cauliflower and potatoes.  I had previously posted a Cauliflower and Onion Tart.  I wanted to make something different though.  I decided on using potatoes as the crust for a quiche. 

             I used a mashed potato for the crust but think that a shredded potato might work pretty well also.  I might try that another time.


Ingredients

  1. florets of 1 head of cauliflower broken in small pieces
  2. olive oil
  3. 1 head of garlic
  4. 4 russet potatoes
  5. 3 tbl of sweet butter
  6. 3 eggs
  7. 3/4 cup of milk
  8. 1/3 cup of half and half
  9. 1 cup parmesan cheese
  10. 1 tsp salt
  11. 1/4 tsp pepper
First, I diced up the potatoes in small pieces, so they would cook quickly.  I put them in a pot of water and let them.  They were done within 15 minutes of boiling.

After dicing the potatoes, I broke up the broccoli in small florets.  I placed them in a baking dish and drizzled a parsley and garlic flavored oil over them.  They then went into a preheated 425F oven and roasted.   I took them out after they started to brown.

I drained the potatoes and placed them back on the stove to let the remaining liquid evaporate.  I then added the butter and mashed the potatoes.  I also seasoned them with salt and pepper.  This should be to taste.

I then greased a 9 x 9inch baking dish with cooking spray.  I placed the potatoes in the dish and formed it into a crust.  It then went into the 425 oven for 15 minutes.


Then combine the milk, eggs, half and half, cheese, salt, and pepper in a bowl.  Add the florets to it.

Take the potatoes out of the oven.  Add the filling to it and place it back in the oven for 30 minutes or until the filling is set.  You could top the quiche with more cheese if you want towards the end. 


This worked nicely with a salad.
