Cauliflower Pancakes

        
             Cauliflower was on sale this week at the supermarket so I decided to try and come up with a different way for my family to eat it.  I know there are other cauliflower pancake or fritter recipes but this one came out really well so I wanted to share it.
        
Ingredients
  1. 1 head of cauliflower
  2. 1 egg
  3. 1/2 cup of milk
  4. 3/4 cup of flour
  5. 1/2 cup of bread crumbs
  6. 1 tsp baking powder
  7. 1 tsp salt
  8. 1/2 tsp pepper
  9. 1 tsp oregano
  10. 1/2 cup parmesan or cheddar cheese
First cut up your cauliflower into florets and steam them until they are soft enough to get a fork through.  I put the florets in a microwave safe bowl and steam them in the microwave for 15 minutes.
While you are waiting for the cauliflower to cook, whisk the egg and milk together.  In another bowl combine the dry ingredients.  Then pour the egg mixture into the flour mixture and whisk them together.  Finally stir in the cheese.

When the cauliflower in done, mash the florets with a potato masher if you want the pancakes chunkier.  I use my stick blender and puree the florets. It makes for a creamier pancake.

They should have the consistency of mashed potatoes.
Now combine the batter in with the cauliflower.
Heat up your frying pan with some canola oil and place flattened spoonfuls of the cauliflower mixture in the pan.
Flip the pancakes when you see the sides starting to brown.

Remove from the pan and enjoy.  These can be served with sour cream.
They came out super creamy on the inside and crunchy on the outside.  Yummy!
This dish got a 2 thumbs up from my husband and 11 year old daughter.  The baby gobbled them up as well.  The other 2 heard cauliflower and pancakes in the same sentence and didn't want to try them.  Well, it was more for the rest of us!
